My husbands’ Aunt Dora-Thea gave us this recipe and we make it quite often. It is delicious, but the best part is that it’s a very healthy soup. My 2 children enjoy it as well. My daughter likes to sprinkle parmesan cheese on top like minestrone soup. I hope you enjoy it as much as my family and I do!
Cinnamon- has antibacterial and anti-inflammatory properties. It also has the ability the improve blood sugar levels.
Turmeric– reduces inflammation and is a potentially powerful cancer fighter.
Ginger- reduces inflammation and pain in people with arthritis. It also, aids in digestion.
Onions- high in quercitin which is an antioxidant that reduces inflammation.
Parsley– high in vitamin K which prevents calcium build up in our tissue that could lead to atherosclerosis. It contains vitamin C and A which are two powerful antioxidants.
Cilantro – can act as a heavy metal cleansing agent by binding to heavy metals which takes them out of our tissues.
Lentils – helps to lower blood cholesterol levels since it is very high in soluble fiber.
1 large onion
Can or box of tomatoes -28 oz
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon turmeric
Cilantro
Parsley
1 cup lentils
8 cups of vegetable broth
1 can white beans
Pasta
Sauté onion. In a blender combine tomatoes, ginger, cinnamon, turmeric, a small handful of fresh cilantro and a small handful of parsley. Add mix to the onions and bring to a boil. Add 1 cup of lentils and 8 cups of vegetable broth. Simmer till lentils are soft. Add a can of white beans. Cook pasta separately. Add some pasta to a soup bowl and ladle soup over pasta.
